TUBA – THE FILIPINO WINE

When Ferdinand Magellan arrived in the Philippines, they have experienced the unique taste of Filipino Wine served in earthen jugs – the Tuba or coconut wine. Spanish chroniclers described it with stinging bittersweet taste. Filipinos consider tuba as a hard drink.

Tuba is made through a simple extraction of sap from a coconut bud. From coconut water, syrup is extracted for fermentation. The liquid is stored for one to three days in earthen jars or gallons.  Lambanog is a derivative of tuba through the process of distillation and it is stronger and more expensive than tuba.

It is said that only tough Filipinos can withstands the stinging effect of Tuba and Lambanog. In the 1970s, Lambanog was the choice of spirit among the hippies and urban youth. Years ago, Lambanog is indispensable for house parties and middle class celebrations.
